1. Chicken Teriyaki with Shirodashi

Ingredients (for 1-2 servings)

・8.5 oz (240g) Chicken thigh
・1 tbsp Shirodashi
・1 tbsp Mirin*
・1 tsp Honey

*Mirin substitute: 1 tbsp Sake + 1 tsp Sugar

Direction

1. Remove excess fat and streaks of the chicken.

2. Make shirodashi sauce by mixing shirodashi, mirin, and honey.

3. Put the chicken in a frying pan with the skin down. Bake on medium heat for about 8 minutes. (For a frying pan that is easy to burn, add a little oil.) Please do not cover in this step.

4. When the chicken skin is browned firmly, pour shirodashi sauce.

5. Turn the chicken over immediately. Cover and bake on low heat for 3 minutes.

6. Take out the chicken and boil the sauce.

7. Cut the chicken, and pour the sauce.

Ready to eat!

2. Egg and Shirodashi Spaghetti

Ingredients (for 1 serving)

・2.6 oz (75g) Spaghetti
・1 tsp Salt

・2 Egg (1 is for an ingredient, and 1 is for a topping.)
・0.7 oz (20g) Butter
・2 tbsp Parmesan cheese
・1.5 tsp Soy sauce
・1 tsp Shirodashi
・1 tsp Sugar

・Black pepper (as topping)

Direction

1. Boil spaghetti with plenty of hot water and salt.

2. Cook 1 egg, over medium or over hard. Cut it into small pieces.

3. Put butter and parmesan cheese in a bowl.

4. Drain the hot water, and transfer the spaghetti to the bowl.

5. Add cut fried egg, soy sauce, shirodashi, and sugar into the bowl. Mix well.

6. Cook another egg, sunny-side up. Put it over the spaghetti on the plate.

Ready to eat!

Sprinkle black pepper as you like when eating!

3. Steamed Lemon Chicken with Shirodashi

Ingredients (for 1-2 servings)

・8.5 oz (240g) Chicken breast
・Half a Lemon (make 1 tbsp lemon juice, and 2 slices for topping)
・1 tbsp Shirodashi
・1 tbsp Sake
・1/2 tbsp Olive oil
・1 tsp Honey
・1/2 tsp Corn starch or Potato starch

・Your favorite vegetable (as topping)

Direction

1. Remove the skin of chicken breast.

2. Make 2 slices of lemon, and make lemon juice with the rest of lemon.

3. Put the chicken into a clean container or plastic zipper bag.

4. Add lemon juice and all of other seasonings into the bag. Rub seasoning into the chicken. Let it rest in your fridge for 30 minutes.

5. Take out the chicken from the bag. Wrap the chicken tightly with plastic wrap, then wrap it with aluminum foil too.

6. Boil water in a pot, and put the chicken into the pot. Boil on low heat for 10 minutes.

7. Turn off the heat. Leave it for 1 hour and cook with residual heat.

8. After 1 hour, take out the chicken from the pot, and slice it.

9. Transfer the lemon sauce left in the bag to the pot, and boil until thickened. Dish up the sliced chicken on a plate, and pour the sauce on top.

Ready to eat!

4. Shirodashi Vegetable Soup

Ingredients (for 2 servings)

・1.4 cups (350ml) Water
・2.5 tbsp Shirodashi
・1.5 oz (40g) Bacon
・1.5 oz (40g) Onion
・1.5 oz (40g) Asparagus
・1 oz (30g) Paprika
・0.5 oz (15g) Carrot
・6 Cherry tomatoes

Direction

1. Cut bacon and vegetables into bite-sized.

2. Put water and shirodashi in a pot.

3. Cook the onion and carrot first. Boil them for about 3 minutes.

4. Add asparagus and paprika, and cook for 2 minutes.

5. Add cherry tomatoes, and cook for 1 minutes.

Ready to eat!
