CHICKEN & BROCCOLI STIR-FRY WITH MISO MUSTARD

Today’s recipe is very unique stir-fry dish using whole grain mustard as a main seasoning.

Whole grain mustard is usually used as a dipping sauce when we eat sausage or something like that.

Just like wasabi with sashimi or sushi (raw fish), the pungent flavor of mustard matches so well with juicy meat dish, doesn’t it?

So… why not try to use it for meat stir-fry dish!!?

By mixing mustard with miso paste, the sauce becomes perfect fit for chicken stir-fry!
And don’t forget to add sweeten seasonings together, otherwise it would be just too salty and pungent…

I used Japanese seasonings such as sugar and mirin, but honey is also good to use for this recipe.

【Recipe (2 servings)】

Ingredients
5 oz chicken leg, Cut into bite-sized
3.5 oz broccoli, Cut into bite-sized
3 oz onion, Cut into bite-sized
●1 tablespoon miso paste (shinshu koji miso paste)
●1 tablespoon whole grain mustard
●1 tablespoon sake (or white wine)
●1 tablespoon sweet sake (mirin)
●1 tablespoon sugar
●1 teaspoon soy sauce

Directions

1. Stir-fry chicken leg with oil in a pan until the color changes.

2. Add broccoli and onion to the pan, and stir-fry well.

3. After vegetables are cooked through, add all of ● seasonings. Mix all of ingredients with the seasonings well.
