Healthy Hamburger
Ingredients (2 servings)
・Your favorite Buns
Healthy Japanese-style hamburger patty
・5 oz (140g) Ground chicken (chicken breast)
・4.6 oz (130g) Tofu
・1.7 oz (50g) Onion
・1 tsp Potato starch
・2 tbsp Beaten egg☆
・2 tbsp Panko☆
・1/2 tsp Garlic powder☆
・A pinch of Salt and pepper☆
・A pinch of Nutmeg☆
Jelly for patty
・0.8 cup (200ml) Hot water (80℃/176°F)
・5g Gelatin
・1 tsp Consomme (or Other stock powder/bouillon)
Sauce
・2.5 tbsp Ketchup★
・1.5 tbsp Tonkatsu sauce★
・1.5 tbsp Sake★
・1 tbsp Soy sauce★
・1 tbsp Sugar★
・1 tsp Butter★
Topping for hamburger
・Lettuce
・Tomato
Lotus root chips
・5.6 oz (160g) Lotus root (Renkon)
・2 tsp Soy sauce◇
・2 tsp Mirin◇
・1/2 tsp Garlic powder◇
・3-4 tbsp Potato starch
・Oil for frying
Direction
1. [Jelly for patty] Dissolve gelatin and consomme in hot (80℃/176°F) water. Mix well, and let it cool. Refrigerate for 1-2 hours to firm up.
2. [Healthy patty] Mince onion, and cook in a frying pan or in microwave until soft. Let it cool and mix it with 1 tsp potato starch. Wrap tofu in paper towel and place a weight on top to drain. In a mixing bowl, combine this drained tofu with onion, ground chicken, and ☆. Knead well.
Crumble the jelly out of the refrigerator into small pieces. When forming the patties, put the jelly in the middle.
3. Oil your frying pan, and cook the patties. Cook over medium heat for 2 minutes, turning over when browned. Add a little sake or water, cover and steam over low heat for 4 minutes.
4. Once the patties are removed and the heat is off, add the ★ to the pan and mix well. Bring to a light simmer, then return the patties and toss well. Put that patty in a bun with lettuce and tomato and you’re ready to go.
5. [Lotus root chips] Slice lotus root and soak them in water for a while. Drain well and season them with ◇. Let sit for 5 minutes to soak up the flavor of the lotus root. Sprinkle a light dusting of potato starch and fry in oil. Fry for 2 minutes on each side until golden brown.
