Ms. Koizumi Loves Ramen Noodles

Ms. Koizumi Loves Ramen Noodles (ラーメン大好き小泉さん) is Japanese manga series by Naru Narumi.

Ms. Koizumi, high school girl heroine who is cool and reticent at school, yet she is actually a ramen enthusiast who wants delicious ramen every day.

Anime television series and live-action drama series were also broadcasted in Japan. Many of Japanese ramen shops that actually exist appear in the play, and is fascinating ramen fans. Also, there are many arranged recipes using instant noodles in the play.

Here, I would like to introduce a reproduction of the ramen from the ramen shop that appears in the play, and some arranged recipes!

1. Croquette (Fried Mashed Potato) Ramen Noodles

Croquette Ramen Noodles is sold at the ramen shop inside the Kasukabe station in Saitama prefecture. The main topping is croquette which is a fried bread-crumbed food containing mashed potatoes, ground beef, and vegetables. It’s usually very rare as a ramen topping, so it became a hot topic through the drama.

I tried to make homemade croquette ramen noodles!

Ingredients (for 1 serving)

・1 pack of Instant ramen noodles (Soy sauce flavor is recommended)

Croquette (fried mashed potato)
・2.6 oz (75g) Potato
・Salt and pepper
・0.7 oz (20g) Onion
・0.7 oz (20g) Ground meat (beef of pork)
・1/2 tsp Butter
・A pinch of Salt
・A pinch of Sugar
・A pinch of Black pepper
・1/3 tsp Soy sauce
・1 tsp Flour
・1 tbsp Beaten egg
・1 tbsp Bread crumbs (panko)
・Oil for deep-frying

Ramen toppings
・1 Boiled egg
・1 slice of Chashu pork
・Menma (seasoned bamboo shoots)
・Wakame seaweed

・Water for the ramen soup (follow instructions)

Direction

1. [Croquette (fried mashed potato)] Cut potato into bite-sized. Microwave it at 500W for 3 minutes. (If you make more potatoes, please extend the time.)

2. Mash the potato using fork. Sprinkle salt and pepper and mix well.

3. Mince the onion, and stir-fry with butter. Add ground meat and season with salt, sugar, pepper, and soy sauce.

4. Mix the stir-fried onion and meat with mashed potato. Form the potato mixture into ovals or circles.

5. Coat the croquette ball with flour. Dip in beaten egg, then coat with bread crumbs.

6. Deep-fry in oil until it becomes golden brown. (Fry for 3 minutes on one side, 6 minutes in total.)

7. [Ramen] Make the ramen noodles in accordance with the package instruction. Put your favorite toppings and croquette!

Ready to eat!

2. Carbonara Style Ramen Noodles

There are various delicious dishes made by Ms Koizumi’s friend, Yu Ohsawa in the anime. She creates original dishes using instant noodles and familiar materials. Carbonara Style Ramen Noodles is one of them.

Carbonara is very popular spaghetti sauce in Japan made from cheese, egg, pancetta (or bacon), and heavy cream. By following this recipe below, you can enjoy scrumptious carbonara flavor with ramen noodles!

Ingredients (for 1 serving)

・1 pack of Instant ramen noodles (soy sauce or tonkotsu flavor is recommended)
・1.7 oz (50g) Onion
・1.4 oz (40g) Bacon
・2 tsp Butter
・1.25 cups (300ml) Milk
・1 tbsp Parmesan cheese
・1 Egg yolk
・Black pepper

Direction

1. Slice the onion and bacon. Stir-fry onion with butter. When the edge of onion gets burnt, add bacon.

2. Add milk, parmesan cheese, and the flavor packet of the instant noodles. Heat it for a while. 

3. Prepare another pot and cook the noodles. Drain the hot water.

4. Dish up the drained ramen noodles on a ramen bowl. Pour the milk soup.

5. Put egg yolk (poached egg is good too). Sprinkle black pepper as you like.

Ready to eat!

3. Italian Style Tomato Ramen Noodles

This is also one of the arranged recipes that Ms Koizumi’s friend made in the play.

I think Italian tomato flavor in this recipe is associated with Japanese ketchup-based spaghetti, Napolitan.

You may think that using tomato juice for the ramen is a little weird, however, it much more delicious than I expected!

Ingredients (for 1 serving)

・1 pack of Instant ramen noodles (salt flavor is recommended)
・1.7 oz (50g) Onion
・0.7 oz (20g) Bell pepper
・0.7 oz (20g) Mushrooms*
・1 oz (30g) Sausage
・1 tsp Olive oil
・1 tsp Minced garlic
・Salt and pepper
・0.4 cup (100ml) Tomato juice
・1.6 cups (400ml) Water
・Parmesan cheese

*I used shimeji mushrooms.

Direction

1. Thinly slice the onion, bell pepper, mushrooms, and sausage. Stir-fry them with garlic and olive oil. Sprinkle salt and pepper as needed.

2. Cook the noodles with water, after 1-2 minutes add tomato juice and the flavor packet of the instant noodles. Mix well.

3. Cook until the noodles are ready.

4. Dish up the noodles with soup, put stir-fried dish on top. Sprinkle parmesan cheese as much as you want.

Ready to eat!

4. Hot and Sour Ramen Noodles

This is also one of the arranged recipes that Ms Koizumi’s friend made in the play.

Hot and sour noodle soup is a Chinese dish and widely popular among Japanese people as well. Although adding vinegar to the ramen soup sounds unfamiliar to some people, it becomes so refreshing and tasty soup!

Because the original ramen soup has strong taste, I think it’s easy to eat even for people who don’t like the flavor of vinegar.

Ingredients (for 1 serving)

・1 pack of Instant ramen noodles (soy sauce flavor is recommended)
・1 oz (30g) Bean sprouts*
・1 tbsp Vinegar
・1/2 tsp Sugar
・1 tbsp Vinegar
・1/2 tsp Sugar

・1/2 tbsp Potato starch (corn starch)
・1 tbsp Water

・Water for the ramen soup (follow instructions)

・1-1/2 tsp Chili oil

*Please add shiitake mushrooms, carrot, and bambooshoot as you like.

Direction

1. Boil the water for the ramen soup. Cook noodles for 1 minute.

2. Add bean sprouts, the flavor packet of the instant noodles, vinegar, and sugar. Stir well.

3. Mix potato starch with 1 tbsp water. Add it to the soup.

4. Add beaten egg. When the egg is a little hardened, stir the soup.

5. Dish up, and sprinkle green onion. Pour a little chili oil as you like.

Ready to eat!
