ODEN style miso soup

ODEN is stew that contains fish cakes, boiled eggs, and vegetables. Seasonings are only dashi (stock) and salt, so the taste is very simple and bonito or konbu (sea cabbage) stock are very important for ODEN. One thing you would like about ODEN is that you can pick your favorite ingredients from the hot pot. If you visit Japanese convenience store, there are so many kinds of ingredients in ODEN box. Each one of them is around 1 dollar, and you can just take few of the items as snack.

I really like all of those ingredients, and I would like to introduce another tasty material: “chikuwa (tube-shaped fish paste cake)”

Cooking ODEN hot pot at home is kind of tough thing because making good dashi and buying all of ingredients are bothering.
Today’s recipe is the best for me! I hope “ODEN style miso soup” will gives me happiness as much as real ODEN.

【Recipe (2 servings)】

Ingredients
1 oz miso paste (fermented soybean paste)*1
1 teaspoon dashi granules*2
5 oz daikon, half circle slice (about 0.5 inch thick)
3 oz chikuwa (tube-shaped fish paste cake), Cut into bite-sized
3 oz shirataki noodles (white noodles made from konjak yam)
1 boiled egg
1.7 cups (400ml) water
(Prepare extra water to boil shirataki noodles)

*1 Feel free to adjust the amounts of miso paste to your liking.
*2 If miso paste already contains dashi, don’t need dashi granules. I use miso paste containig dashi this time.

Directions

1. Heat shirataki noodles in boiled water for 2 min, and drain water (so that strong smell of shirataki is taken away).

2. Microwave daikon for 5 min (so that you can shorten the cooking time).

3. Heat water, daikon, chikuwa, shirataki noodles, and dashi granules in a saucepan.

4. After daikon gets soft enough, add boiled egg in order to just warm up.

5. Add miso paste and stir until miso has completely melted. Cut boiled egg in half before serving.

Chikuwa in the miso soup created wonderful dashi (stock) more than I expected!
The great dashi from the fish paste and miso paste definitely fulfill the requirements of ODEN.
I am so happy that this miso soup become such a tasty bowl of ODEN.
