1. Chicken Soba

Ingredients (1 serving)

・3.5 oz (100g) Soba noodles (Dried version)
・2.8 oz (100g) Chicken
・1.7 oz (50g) Green onion (Negi)
・1/2 tsp Oil
・1 cup (250ml) Water☆
・1 tbsp Soy sauce☆
・1 tbsp Sake☆
・1 tbsp Mirin☆
・1 tsp Sugar☆
・2/3 tsp Dashi powder☆

Topping

1.  Cook the chicken, skin side down, until the skin is very crisp. (Oil your frying pan if needed.) This should take 5-6 minutes over medium heat. Cook the green onion together. Turn the green onion halfway through cooking so they are charred on both sides.

・1 tbsp Mirin☆
・1 tsp Sugar☆
・2/3 tsp Dashi powder☆

Tempura (2 servings)
・3.5 oz (100g) Lotus root (Renkon)
・2.5 oz (70g) Eggplant
・2 oz (60g) Kabocha squash
・2-4 Shiso leaves

Tempura batter
・0.4 cup (100ml) Ice water★
・2.5 oz (70g) Flour★
・1/2 Beaten egg★

1.  Cut vegetables into bite-size pieces or slices. Pat dry with paper towel well. Make tempura batter by mixing ★. Dip each veggies in the batter.

Ingredients (1 serving)

・3.5 oz (100g) Soba noodles (Dried version)
・0.8 cup (200ml) Boiling water☆
・1 tbsp Soy sauce☆
・1 tbsp Mirin☆
・1 tsp Sugar☆
・2/3 tsp Dashi powder☆

・2.8 oz (80g) Thinly sliced beef
・1.7 oz (50g) Onion
・2 tbsp Water★
・2 tsp Soy sauce★
・2 tsp Sake★
・2 tsp Mirin★
・1 tsp Sugar★

Topping
・Minced green onion

Direction

1.  Thinly slice onion. Put the onion and ★ in a pot. Simmer until onion is slightly soft.

2.  Add thinly sliced beef. Simmer until beef is fully cooked and onion is soft enough. 

3.  Cook the soba noodles in plenty of water. Drain and rinse with water.

4. Kitsune Soba (Simmered Fried Tofu Soba)

Ingredients (1 serving)

・3.5 oz (100g) Soba noodles (Dried version)
・0.8 cup (200ml) Boiling water☆
・1 tbsp Soy sauce☆
・1 tbsp Mirin☆
・1 tsp Sugar☆
・2/3 tsp Dashi powder☆

Kitsune (2 servings)
・1 oz (30g)/1 sheet Thin fried tofu
・0.4 cup (100ml) Water★
・1 tbsp Sugar★
・1/2 tbsp Sake★
・1/2 tbsp Soy sauce★
・1/2 tbsp Mirin★
・1/2 tsp Dashi powder★

Topping
・Boiled spinach
・Kamaboko (Boiled fish cake)
・Tempura bits (Tempura flakes/Ten-kasu/Age-dama)

Direction

1.  Cut fried tofu in half and pour boiling water over it to remove some of the oil.

2.  Put ★ in a pot. Mix well and bring to a light boil. Add fried tofu, and simmer for about 10 minutes with a lid.

3.  Turn it over and simmer for about 6 minutes. Remove the lid, and simmer for 1-2 minutes until the sauce is almost gone.

4.  Cook the soba noodles in plenty of water. Drain and rinse with water. 

5.  Mix ☆ in a bowl. Add noodles. Top with simmered fried tofu, boiled spinach, kamaboko, and tempura bits.

5. Tororo Soba (Grated Yam Soba)

Ingredients (1 serving)

・3.5 oz (100g) Soba noodles (Dried version)
・0.8 cup (200ml) Boiling water☆
・1 tbsp Soy sauce☆
・1 tbsp Mirin☆
・1 tsp Sugar☆
・2/3 tsp Dashi powder☆

・6.3 oz (180g) Grated Japanese yam (or Chinese yam)

・3.5 oz (100g) Nameko mushrooms
・1 tbsp Sake★
・1 tbsp Soy sauce★

Topping
・Egg yolk or Onsen-egg
・Aonori or Minced green onion

Direction

1.  Rinse nameko mushrooms well, put them in a pot with ★. Bring to a light boil, and simmer for 3 minutes. Turn off the heat.

2.  Prepare grated Japanese yam and egg yolk.

3.  Cook the soba noodles in plenty of water. Drain and rinse with water.

6. Oroshi Soba (Grated Daikon Soba)

Direction

1.  Cut and peel the daikon. Prepare grated daikon.
