Local Dishes with Cabbage in NSEW Directions in Japan

1. Spicy Miso Pork and Cabbage Teppanyaki

Ingredients (2 servings)

・7 oz (200g) Cabbage
・5.6 oz (160g) Pork fillet
・1.4 oz (40g) Pork belly (optional)
・1 clove of Garlic
・A pinch of Salt
・1 tsp Oil

*Umami-rich and fiery chili oil sauce
・2 tbsp (25ml) Sesame oil☆
・1 tbsp (15ml) Vegetable oil (or Your favorite oil)☆
・2 tsp (5g) Chili pepper☆
・2 cloves of Garlic
・1.4 oz (40g) Green onion
・2 Takanotsume (Red hot pepper)
・2.5 tbsp Soy sauce★
・1/2 tsp Salt★
・1/2 tsp Sugar★

Spicy miso sauce for teppanyaki
・1 tbsp Umami-rich and fiery chili oil sauce*
・1 tbsp Miso paste

Direction

1.  [Chili oil] Mince garlic, green onion, and takanotsume. Put these in a frying pan. Add ☆, and heat and stir well. When it boils, reduce the heat to low and heat for 3 minutes while stirring.

2.  Transfer the chili oil to a bowl, and let it cool completely. Then, add ★. Mix well and chili oil is done!

3.  Cut cabbage and pork into bite-sized pieces. Sprinkle salt. Stir-fry the pork with oil and sliced garlic. Take out once, then stir-fry cabbage as well.

4.  Make spicy miso sauce by mixing miso paste with chili oil. Eat the cabbage and pork while dipping in the sauce.

2. Jaja Miso Cabbage

Ingredients (2 servings)

・7 oz (200g) Cabbage
・1 oz (30g) Pork belly
・1 tsp Oil
・2 tsp Minced garlic
・2 tsp Minced ginger
・1/2 tsp Doubanjiang
・2 tsp Miso paste☆
・1 tbsp Water☆
・1/2 tsp Sake☆
・1/2 tsp Soy sauce☆
・1/2 tsp Sugar☆
・1/2 tsp Rice vinegar☆
・1 tsp Potato starch water-soluble

Direction

1.  Cut cabbage into bite-sized pieces, and cook in a frying pan or microwave until soft.

2.  Mince pork belly. Stir-fry minced garlic and ginger with oil. Then add pork and doubanjiang. Mix well and season them with ☆.

3.  Finally, add a little potato starch water-soluble and heat for 1 minute on high heat.

4.  Place cabbage on plate and top with meat miso.

3. Osaka-Style Okonomiyaki

Ingredients (2 servings)

・4 oz (110g) Cabbage
・3.5 oz (100g) Chinese yam (Nagaimo)
・1.7 oz (50g) Green onion
・1.4 oz (40g) Pork belly
・1.4 oz (40g) Flour☆
・3 tbsp (40ml) Water☆
・1 tsp (2.5g) Dashi powder☆
・1 Egg
・3-4 tbsp Tenkasu (Tempura bits)
・2 tsp Oil

Topping
・Okonomi sauce
・Mayonnaise
・Dried bonito flakes
・Aonori

Direction

1.  Roughly chop cabbage and mince green onion. Make batter with ☆. Grate yam.

2.  Mix the batter with cabbage, grated yam, and tempura bits. Finally, mix it with egg.

3.  Oil the frying pan, and pour the dough. Place thinly sliced pork belly on top of the dough. Cook between medium and low heat for 5 minutes. Turn over, cover and cook over low heat for 5 minutes.

4.  Remove lid and bake for 1 or 2 minutes to wilt away moisture. Eat with okonomi sauce and mayonnaise.

4. Fried Cabbage with Fried Tofu

Ingredients (2 servings)

・8.8 oz (250g) Cabbage
・1 sheet of Thin fried tofu (Abura-age)
・2 tsp Oil
・2.5 tsp Soy sauce
・A pinch of Dashi powder

Direction

1.  Cut cabbage into bite-sized pieces, and cut fried tofu into small pieces.

2.  Put half of the cabbage in a deep pan with plenty of oil (warm through and reduce heat to low). Once the fried tofu is spread over the cabbage, place all the remaining cabbage on top.

3.  Finally, add soy sauce and dashi powder on top of the cabbage, cover and steam over low heat for 5 minutes.

4.  When the cabbage is tender, it is done. Mix well at the end to even out the flavor.
