Burdock Salad with Sesame Miso-Mayonnaise Dressing Recipe

BURDOCK SALAD WITH SESAME MISO-MAYONNAISE DRESSING

When I think about making salad with mayonnaise, it often ends up with using potatoes or macaroni as main material.

Potato (or macaroni) salad with plenty of mayonnaise is very tasty and one of my favorite side dish.

But sometimes I feel like “Want to use healthier ingredient…”

Burdock salad is perfect choice in such time.
Using only burdock is OK for the salad, but let’s use different kind of fresh vegetables with it today.

I picked carrot and cucumber this time. (You can use your favorite vegetable too).

Each one of those vegetables has nice and crisp texture. (Especially the texture of burdock is really nice!)

Good thing about using miso paste for the dressing is that miso makes the taste of salad more rich and strong, so you don’t need to use a lot of mayonnaise.

Grind white sesame adds amazing flavor to the salad too.

【Recipe (2 servings)】

Ingredients
1.5 oz burdock, Shredded
1.5 oz carrot, Shredded
3.5 oz cucumber, Shredded
●2 tablespoons mayonnaise
●1.5 tablespoons grind white sesame
●1.5 teaspoons miso paste
●1 teaspoon sugar
●A pinch of salt and pepper

Directions

1. Boil burdock and carrot with plenty of water for 2 min.

2. Drain vegetables and pat dry with paper towel.

3. Mix ● seasonings in a mixing bowl.

4. Add cucumber, boiled burdock, and carrot to the bowl. Stir well.
